Ingredients
- 1 packet of 1.2.3 Gluten Free Brownie Mix
- ½ cup (120ml) vegetable oil
- 1 cup (250g) canned pumpkin puree
- ½ cup (114g) silken tofu, blended until completely smooth
- 2 Tsp. baking powder
Method
Preheat the oven to 350F/180C (160C Fan).
Spray 8” x 8” pan with non-stick spray or line with parchment.
Pour brownie mix into bowl of mixer with paddle attachment (or in a large mixing bowl and mix by hand). Add vegetable oil, pumpkin, tofu and baking powder. Mix well. Pour mixture into the pan and spread evenly.
Bake for approximately 30 minutes, until a toothpick inserted in the centre comes out nearly clean. Baking times may vary by appliance.
Cool, then cut. Makes approximately 24 brownies.
